Abstract
The chapter charts the first wave of Thai migration and settlement in Los Angeles during the 1960s and 70s and details Thai migrants' attempts to reproduce Thai dishes without necessary Thai and Southeast Asian ingredients. Thai restaurateurs, chefs, and home cooks during this period struggled to produce the complex and uniquely balanced Thai flavors with local ingredients, which led to a crisis of identity.
